INGREDIENTS
- 2 TB olive oil
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 tsp kosher salt
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp chili powder
- ½ tsp ground black pepper
- 1 lb. ground chicken (can be turkey, beef)
- 2 cups chicken stock
- 1+ cup Sully's mix
- 1 can kidney beans, drained/rinsed
- 1 can black beans, drained/rinsed
- 1 can fire roasted, diced tomatoes
DIRECTIONS
*** I double recipe and add more Sully's and a bit of chix stock depending on your choice of consistency.
1.Heat oil in large Dutch oven over medium-high heat. Once hot, add diced onion and bell pepper and sauté for 5 min. , stirring occasionally.
2. Add minced garlic and allow it to cook for 3 seconds. Add the salt, paprika, cumin, chili powder, ground black pepper. Sitr and sauté for 1 minute.
3. Add the ground chicken to the pot and break it up with back of spoon. Allow it to cook for 4-5 minutes-browned.
4. Add chicken stock, Sully's Mix, beans and diced tomatoes to pot. Increase heat and bring to a low boil.
5. Cover and simmer 15 minutes until reduced.
6. Serve immediately or save in refrigerator.....also freezes great.
